Diego’s… Casual American with contemporary mexican food — and more.

Diego’s Spirited Kitchen opened in January 2009 in downtown Redmond, Oregon with a passion for international cuisine. Owner Pablo Peña and partner Juvenal Santana combined their success with Madaline’s Grill and the classic mexican food, with a whole new international menu.

Diego’s features a full bar with lively spirits, and the drinks speak for themselves. The famed “No Rules ‘Rita” is a favorite of local residents.

One look at the extensive menu and you’ll see that we offer more than just mexican food and american food — there are a few international surprises; italian – inspired dishes, Creole cuisine, and so much more like our signature Pork Osso Bucco, Tex Mex Spring Rolls, Pastas, and fresh made margaritas.

Diego’s  continues to offer the community a spot for delectable tastes. Our kitchen has found continued success by offering great food and atmosphere; a place for Central Oregonians to meet and mix in Redmond.


Diego’s Spirited Kitchen – Our History

Pablo Peña and Juvenal Santana shared a vision of opening a high-end Latin cuisine restaurant. Both men had talents that extended beyond Mexican food to include steaks, salads, and pastas. The two met their wives at a thriving Mexican restaurant, Las Margaritas, in Kirkland, Washington, owned by their father-in-law. Learning much from him, they eventually moved to Central Oregon to create what is now known as Diego’s Spirited Kitchen, located in the heart of Redmond.

 


Diego’s opened its doors in January 2009, during the Great Recession. Many people told Pablo and Juvenal that it wasn’t the best time to start a business. However, their hope and faith in God gave them the strength to move forward. From the moment Diego’s opened, it was blessed by both God and the community, quickly becoming one of the top restaurants in Redmond.

Sadly, in 2017, Pablo’s brother-in-law, Juvenal Santana, was diagnosed with cancer and passed away. These two men, who loved each other like brothers, left a lasting legacy in their beautifully crafted recipes. Today, Pablo and Maribel Santana, Juvenal’s wife, continue to run Diego’s. Thanks to our wonderful customers, we have been open for nearly 16 years and pray that Diego’s will continue to serve future generations.
